This skill set is suited to anyone working in a food handling business who needs to meet the new legislation for food handling.

You'll gain practical skills in food safety and workplace hygiene and put these into practice in our training kitchens. The units covered in the skill set can provide credits towards the Certificate ll and lll in Commercial Cookery.

During this three-day course, you will gain knowledge of safe food practices and hygiene requirements.

This course covers how to:

  • Understand the obligations of food handlers under current legislation
  • Handle and store food safely
  • Reduce the risk of foodborne illness (food poisoning)
  • Implement procedures for food safety
  • Follow all food safety policies and procedures correctly and consistently according to the organisation's food safety program requirements to ensure compliance with all food handling practices
  • Control food hazards at critical control points
  • Complete food safety monitoring processes and complete documents as outlined in the food safety program
  • Identify and report practices that are inconsistent with the food safety program
  • Take corrective actions for incidents where food hazards are unacceptable
  • Identify potential hygiene risks
  • Implement correct methods of cleaning and sanitising
  • Maintain correct standards of personal hygiene for food handlers in your workplace

This is a comprehensive course which comprises of a set of skills to equip individuals in hygienic practices and handling food safely during the storage, preparation, display, service and disposal of food. This skill set is for food handling personnel or food safety supervisors working in tourism, hospitality and catering organisations with permanent or temporary kitchen premises, and smaller food areas or bar areas. It applies to food handlers who directly handle food or food contact surfaces such as cutlery, plates and bowls during the course of their daily work activities. This includes chefs, cooks, caterers, kitchen stewards, kitchen hands, bar and food beverage attendants, and sometime room attendants and front office staff. Eligible candidates must be employed in a role where handling food is a routine component of their role and they have the opportunity to immediately apply learnings and practice required skills under the supervision of a competent person(s).
