This qualification reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. The work role will have a supervisory or team leading role, with graduates working independently or with some limited guidance from others.

If you are passionate to become a master in cake decorating and making bread, this is the perfect opportunity for you. In 2023, you can complete a formal qualification in patisserie for FREE. You will learn to make a range of bread, pastries and cakes using commercial equipment and machinery in fully-equipped commercial kitchens. This one-year and a half year full time course provides students with broad cross section of theoretical knowledge and practical skills training in fully equipped commercial kitchens. You will gain the knowledge and skills to work in a commercial kitchen and be able to plan, prepare and bake specialised cakes, desserts, tarts, petit fours, pastries, yeast goods and chocolates. You will also learn how to follow health and food safety procedures, maintaining kitchen premises, developing hospitality industry knowledge, developing cost effective menus and preparing food according to dietary and cultural needs. You are required to do hands-on practical training in Australian Professional Skills Institute’s fully operational commercial training kitchens in East Perth. You will have the opportunity to undertake workplace training in patisserie, bakery, cake shops, hotel pastry department as a trainee pastry chef.
