This qualification reflects the role of cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Using discretion and judgement, they work with some independence and under limited supervision, using plans, policies and procedures to guide work activities.

Completion of this qualification contributes to recognition as a trade cook.

Opened in early 2023, the purpose-built training facility Saltbush Training Restaurant at Mandurah campus provides a real-life setting for students to build their practical skills and become workplace ready. The restaurant is part of the Mandurah Hospitality and Tourism Training Centre which delivers simulated training in commercial cookery, tourism and event management. The Centre also features two well-equipped training kitchens and a production kitchen for hands-on training. The opening of Saltbush Training Restaurant marks an exciting new chapter for cookery and hospitality training in the Mandurah and Peel region! This qualification reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Using discretion and judgement, they work with some independence and under limited supervision using work plans, policies and procedures to guide work activities. Work may occur in a variety of settings, including hotels, restaurants, pubs, cafes, functions, events, residential facilities and lunch bars.

You will also learn skills to produce quality foods, plan menus, prepare food according to dietary or cultural needs, control costs, work as part of a team, and serve a range of meals in a professional manner. You will practice the skills you have learned in a simulated work environment or at an appropriate hospitality establishment.

In 2023, you can complete a formal qualification in commercial cookery for FREE. This one-year full time course provides students with broad cross section of theoretical knowledge and practical skills training in fully equipped commercial kitchens. You will be job ready upon completion of the qualification and can work as a qualified commis chef, cook or assistant chef. In this course, you will learn planning, organising, preparing and presenting dishes such as appetisers, stocks, meats, seafood and poultry, desserts and pastries, following health and safety procedures, maintaining kitchen premises, developing hospitality industry knowledge, developing cost effective menus and preparing food according to dietary and cultural needs. You are required to do hands-on practical training in Australian Professional Skills Institute’s fully operational commercial training kitchens in East Perth. You will have the opportunity to undertake workplace training in hotels, restaurants, hotels, clubs, pubs, cafes, cafeterias and coffee shops as a trainee chef.
