You'll learn how to prepare dishes to a commercial standard, and gain a whole load of job-ready skills including using food prep equipment, hygiene and safety for food handling, managing stock control and perishable goods, communicating with kitchen staff, working as part of a commercial kitchen team, and kitchen safety. Depending on your training provider, you'll be able to choose elective units that support your career goals such as catering; Asian cookery; patisserie; and customer service.

This course is focused on honing specific skills relating to food preparation and cookery in a commercial kitchen environment under direct supervision. You'll learn food hygene practices, food preparation, basic cookery, stock and inventory skills and communication skills in our industry-standard commerical kitchen on campus.

This qualification reflects the role of individuals working in kitchens who use a defined and limited range of food preparation and cookery skills to prepare food and menu items. They are involved in mainly routine and repetitive tasks and work under direct supervision. This qualification does not meet the requirements for trade recognition as a cook, but can provide a pathway towards achieving that. This qualification provides a pathway to work in kitchen operations in organisations such as restaurants, hotels, catering operations, clubs, pubs, cafes, and coffee shops; and institutions such as aged care facilities, hospitals, prisons, and schools.
Delivery location

This qualification is to provide current and potential hospitality employees the opportunity to develop their skills and knowledge in Kitchen Operations or to have their current skills, knowledge and experience formally recognised. It is expected that students completing this course will be equipped with the knowledge and skills to work as a kitchen hand or in food preparation in organisations such as restaurants, hotels, clubs, pubs, cafés, and coffee shops.
