You'll learn how to prepare dishes to a commercial standard, and gain a whole load of job-ready skills including using food prep equipment, hygiene and safety for food handling, managing stock control and perishable goods, communicating with kitchen staff, working as part of a commercial kitchen team, and kitchen safety. Depending on your training provider, you'll be able to choose elective units that support your career goals such as catering; Asian cookery; patisserie; and customer service.

This course is focused on honing specific skills relating to food preparation and cookery in a commercial kitchen environment under direct supervision. You'll learn food hygene practices, food preparation, basic cookery, stock and inventory skills and communication skills in our industry-standard commerical kitchen on campus.

This qualification will provide you with the skills and knowledge to undertake a range of kitchen functions in restaurants, hotels, catering operations, clubs, pubs, cafes, cafeterias, and coffee shops.

You will learn to prepare and serve foods and beverages, prepare and produce appetisers, salads, vegetables, fruits, eggs, and farinaceous dishes. Additionally, you will learn about workplace cleanliness, safe food handling practices and hospitality information usage.

They are involved in mainly routine and repetitive tasks and work under direct supervision. This qualification does not meet the requirements for trade recognition as a cook, but can provide a pathway towards achieving that. This qualification provides a pathway to work in kitchen operations in organisations such as restaurants, hotels, catering operations, clubs, pubs, cafes, and coffee shops; and institutions such as aged care facilities, hospitals, prisons, and schools.

This qualification is designed to suit workplace-based trainees who are employed in a kitchen operations role within a hospitality business. It is a comprehensive course designed to give participants entering the hospitality industry the necessary skills to perform the job role of a kitchen hand or assistant. The qualification provides a pathway to work in many hospitality industry sectors, including apprentice chef, and is suitable for a diverse range of employers including restaurants, food service businesses and hotel and accommodation organisations. This qualification is targeted towards (but not exclusive to) School Based Trainees, who are employed in a hospitality business part-time, while also continuing their school education. Typical School Based Trainees will work between 7.5 and 20 hours per week as part of their employment arrangements.
